Sometimes I can get into a rut of buying one cut of chicken, like chicken breast, or chicken drumsticks, or chicken wings but buying a whole chicken and using all the parts is a great way to make sure you are eating a variety of cuts with a variety of nutritional differences. It is also more economical and more environmentally conscious.
With one roasted chicken, you can make 5 different meals using the meat as an accent as opposed to the main course of your meal.
This post is will show you how to get 5 meals from one chicken.
You can either purchase a rotisserie chicken or roast a chicken yourself. Just season simply with kosher salt and olive oil- air fry 360 for 50 minutes or till 165 degrees. Cool the chicken and slice white meat off the breast, separating dark meat into a different pile.
Here are 5 ideas of meals you can make with your roasted chicken.
- BBQ chicken pizza: Here’s a great recipe for home made dough or you can use, pita bread, french bread, or even bagels/ english muffins. You will need dark chicken meat, BBQ sauce, red onions, mozzerella cheese, and cilantro (for garnish)
- Buffalo chicken stuffed potatoes: you will need dark chicken meat, Frank’s Hot sauce, blue cheese or blue cheese dressing, sliced celery, and baked potatoes. Mix the chicken, hot sauce, and chopped celery together, stuff into baked potatoes, and garnish with blue cheese.
- Chicken teriyaki fried rice: you will need dark chicken meat, cold cooked rice, teriyaki sauce, frozen peas and carrots, sliced green onion. Garnish with green onions.
- Chicken ceasar salad: you will need white chicken meat in strips, romaine lettuce, croutons, ceasar dressing- I like this recipe which is made with premade mayo.
- Chicken noodle soup- you will need white chicken meat in chunks, chicken bouillon or broth, mire poix (chopped carrots, onions, celery), and pasta noodle (traditional is egg noodle) or rice of your choice.
